We now have a global epidemic of obesity and type 2 diabetes mellitus. This is believed to be the cause of the increase in atherosclerosis. There is now an increased interest in the effects of macronutrients on insulin sensitivity and resistance, oxidative stress and inflammation, appetite control and the development of atherosclerosis.
This review covers research on the long-term effects of diets and the anti-inflammatory effects of food.
CONCLUSION: The current research knowledge on the health consequences of our diets will help up to develop healthier eating habits and improve our general health.
NOTE: Flavonoids and omega-3 fatty acids are known to be anti-inflammatory.
