Metabolism in the normal human produces acids in the form of sulfuric acid and phosphoric acid. The acids are produced by such metabolic processes as the digestion of proteins. To maintain normal body pH (a state neither acidic nor alkaline,) the kidneys excrete the correct amount of acid. When the kidneys can’t keep up with the changes in pH, shifts take place in the body’s buffer systems and in respiratory rates to maintain the proper blood pH.
The authors studied overweight patients by doing three separate weekly fasts. During a one-week fast, the patients were given either sodium bicarbonate, sodium chloride or ammonium chloride. The patients were most acid (lowest pH) when they were given ammonium chloride. They were most alkaline (highest pH) when they were give sodium bicarbonate. Intermediate levels were seen when they were given sodium chloride.
CONCLUSION: The authors studied several chemicals to see which would be of most benefit in maintaining normal body pH. Of sodium bicarbonate, sodium chloride and ammonium chloride, sodium bicarbonate was the best at producing a high pH (alkalinizing.) Ammonium chloride produced the lowest pH (less alkalinizing).
